But probably most importantly, they are leavened with the help of sourdough and slow-fermentation, accomplishing an inimitable flavor profile.

We source our roasted beans from Water Avenue Coffee. They seem to be really good at it because we're always running out at the bakery.

Spielman schmear is made in small batches with fresh, delicious ingredients -- from "plain ol" whipped cream cheese to smoked salmon to berry schmear to savory garlic hummous, there is something for everyone!

The Story Behind Us
Spielman Bagels & Coffee began in 2011 as a father son coffee roasting company. Rick and his son Raf Spielman opened their first location on SE Division. Their focus for the shop was to bring the environmental benefits of shade grown coffee to a wider audience through in-house roasting.
Portland’s Choice for Wholesale Bagels
Spielman Wholesale bagels was started in 2013 to help keep up with the growing popularity of our bagels. Our commissary now supports all of our stores and over 50 vendors in the Portland, Salem, and Vancouver areas. Most of our offerings are made onsite and include bagels, schmears, pastries, and more. We also partner with local companies such as King Harvest hummus and Tony’s Smokehouse for the salmon in our schmear.
Catering Breakfast Favorites to Your Table
Spielman Catering launched in 2016 to share our beloved breakfast menu with a wider audience. Beyond our signature bagels, schmears, and coffee, we offer a range of breakfast favorites. Catering is available Monday-Saturday, with delivery depending on order size. From bulk bagels, schmears, and coffee to customized spreads like lox platters, pastries, house meats, fruit, eggs, yogurt with granola, and hummus, we cater to all events.
